Preheat your oven to 325 F
In a small saucepan, melt the butter. Continue heating the butter until it browns and perfumes the kitchen with a nutty aroma. Be careful! Browned butter can burn quite easily, so remove it off the heat sooner than later to prevent that.
Once butter is browned, mix in vanilla, maple syrup, and salt
In a large bowl, combine dry ingredients - oats, pecans, cinnamon and nutmeg
Pour wet mixture into the large bowl with the dry ingredients. Mix well to combine
Add bourbon, continue mixing
Dump granola mixture onto a sheet pan. Optional: line sheet pan with a silicone baking mat for easier cleanup. Bake at 325 F for 30 minutes, turning halfway
Remove from oven. Let the granola cool completely on the baking sheet.
