Okay, I know this is a long-winded recipe title. But it contains all of the words used! Brown butter for the fat to give this the golden color and crispiness granola needs. Maple for the sweetener. Bourbon because why not? It’s fall and it’s Nick’s favorite flavor bomb. And pecans for the nut of choice in this one. I cannot even begin to explain how delicious this stuff is – you will GOBBLE IT UP.

Also – can anyone believe it’s already more than halfway through September? I remember when it was July like it was just yesterday! And since I am in Texas, I keep hearing all this stuff about fall starting but it stays so hot here for a while longer, that I wanted to bring in a recipe that could start to get me in the fall mood and excited for the holidays to come. After all, can you believe Halloween is just next month?! OMG – winter is coming!

This was another spin I wanted to make on granola. As I have mentioned before, for breakfast Nick has been on a yogurt kick and likes the texture that granola brings to the party. And lately my breakfasts have been acai protein bowls, so I also use granola for a bit of a crunchy topping. So with both of us going through granola, it’s been fun to create new recipes to try out! And this one is a CLEAR winner. Get ready and MAKE THIS!

Brown Butter Maple Bourbon Pecan Granola

A GOBBLE IT UP worthy granola recipe made with brown butter, maple syrup, bourbon, and pecans. Perfect for a start of fall treat for breakfast or any time!

Ingredients

  • 2.5 cups rolled oats
  • 1 cup raw pecan halves
  • .5 cup maple syrup
  • 6 tbsp butter
  • 2 tbsp bourbon
  • 1 tsp vanilla extract
  • 3/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon

Instructions

  • Preheat your oven to 325 F
  • In a small saucepan, melt the butter. Continue heating the butter until it browns and perfumes the kitchen with a nutty aroma. Be careful! Browned butter can burn quite easily, so remove it off the heat sooner than later to prevent that.
  • Once butter is browned, mix in vanilla, maple syrup, and salt
  • In a large bowl, combine dry ingredients – oats, pecans, cinnamon and nutmeg
  • Pour wet mixture into the large bowl with the dry ingredients. Mix well to combine
  • Add bourbon, continue mixing
  • Dump granola mixture onto a sheet pan. Optional: line sheet pan with a silicone baking mat for easier cleanup. Bake at 325 F for 30 minutes, turning halfway
  • Remove from oven. Let the granola cool completely on the baking sheet.
