My Story

Why hello there, it’s nice to meet you! I’m Nicola 🙂 A professional corporate worker by day, and food fanatic always.

Growing up, I lived in Texas, but raised by Californian parents, so my diet was always more centered around vegetables and fresh food than those around me. My grandmother is a descendant of Sicilian and Portuguese culture, and that was always the main cuisine I remember eating as a child. We never really ate out much, so it is my first instinct to whip something up rather than to go out to eat.

I remember becoming “domesticated” as soon as I had my first apartment where I had to take care of myself. I found so much joy and pride in cooking! Fast forward a few years, and now I don’t necessarily have to follow recipes, but I make what sounds good based on what I have. I consider myself pretty practical in the kitchen, not trying to spend too much money or take too much time to fix up a meal. I normally play a game of “what is in my fridge should I use up” and then base my meal around that.

My husband Nick has MS, so I also consider his best interests when I cook. I do a lot of research these days on nutrition and have been finding vegetarian/vegan foods to be the healthiest for MS and a wide variety of other diseases. That’s mostly what I cook, and what you’ll find here.

The goal of this blog is to combine my interest of photography (back in the day I was an assistant wedding photographer and portrait photographer) and food. I want to show how easy it is to come up with cheap, easy meals that are still loaded with nutrition and flavor. Thanks for diving in with me!
