How has everyone been lately? I am trying to get more social with you guys on Instagram and Facebook stories. Feel free to start interacting with me – it will be really fun for me to interact with you guys! Man, this week has been an emotional ROLLER COASTER. I don’t know if it has anything to do with the full moon we just had, or just balancing a lot of different facets of life right now. But for real – it’s been tough.

Sometimes all it takes is a little pick-me-up to turn a frown upside down. One weekend recently I was working outside and getting hot and realized I hadn’t had my coffee for the day yet. So I came up with the idea just to brew some coffee and throw it into my blender with some ice to make a coffee slushie of sorts. And it turned out great! I know it sounds simple – coffee, and ice, but truly – sometimes that’s all it takes to turn a typical morning beverage into something way more fun and cooling! I transitioned to drinking black coffee around 6 months ago or so, but this, of course, would be great if you added any kind of milk or creamer you wanted, and/or a sweetener of your choice.

If you want to be adventurous, try:

  • Dairy-free coffee creamer (I like Califia Farms)
  • Milk or cream
  • Granulated sugar
  • Honey
  • Maple Syrup
  • Liquid Stevia (for my low-cal gals)
  • Vanilla extract
  • Cinnamon
  • anything you enjoy that you would normally add to your coffee!

With the start of summer approaching, I want to load you guys up with some cooling recipes to add to your arsenal. As a Texan, I hope I can do you proud! As always, please feel free to tag me @nommingwithnicola and #nommingwithnicola so I can see your recreations. I would love to share on social media what you are able to do! And pin for later here:

  • This could not be simpler! If you do not have cold brew, brew a cup of coffee and stick it in the fridge until it cools down. Once it will not melt your ice, add the coffee and ice to a blender (with optional add ins if desired) and blend until slush-like. Add extra ice if you want it thicker. Pour into a glass, and enjoy!
